4 Tips for BBQ Leftovers
The one thing that you wouldn’t want is throwing extra food on the BBQ grill at the last minute. Always prepare more than you need so you don’t have to worry about running out. Of course this will leave you with leftovers more often than not. So what do you do with all this extra cooked and uncooked food?
#1 Grill them the next day
I grilled the leftover black pepper chicken legs in my oven the next day for 20 minutes. 4 pieces of excellent marinated chicken from Meat the Butcher at Bukit Timah Road, which is more suitable for a meal for a small group of 2 to 3, instead of a BBQ group of 20.
Try not to get chunky chicken legs, especially when you have other gourmet meat that are already in the selection. Chicken pales in comparison to red meat like pork ribs and beef steaks. Big chunky chicken legs are difficult to manage when it comes to cutting them up.
#2 Stir Fry them the next day
Chuck and myself love the white button mushrooms so in every BBQ, we never fail to lug at least 1KG of mushrooms home. This time, the designated BBQ-ers took some time to experiment with cooking it to perfection and hence it didn’t get as popular. What I did was to stir-fry the left overs with 2 (also left-over) sticks of “Shaolin kebab” from EZB (which consist of brocolli, brinjal, red and yellow peppers), add in some oyster sauce and it makes a stir fry dish.
#3 Store them in the fridge
If you’re planning on finishing off your leftovers in the next few days, wrap it tightly and keep it in the refrigerator. If, on the other hand, you want to keep it for more than a few days, wrap it in foil and seal it in a zip lock bag (try to get as much as possible out of the bag). This will allow you to freeze the leftovers and keep them for several months.
#4 Finish up (obviously) or toss
Nearing the end of the BBQ session, keep in mind the type of food that is going to the grill. Push for perishable foods, like satay or meats that have been exposed to room temperature for the past few hours (unless they are unwrapped, food that are exposed may be unsafe for consumption). Finish up the food with your guests. Tossing proper food away should be of the lowest priority.
